As a back-up, could you use transliterated names instead? Jordan is Al-ʾUrdunn, Syria is Sūriyā etc. That's often how they're shown on road atlas.

A lot of the exit checks were done via passenger lists. Difficult to know how it will actually work in practice because of Covid-19. Next year, the EU is introducing ETIAS, their equivalent to ESTA, which will change things somewhat further.

There were separate lanes at the ports and terminals for EU/EEA/Swiss nationals (the UK being in the EU free movement area until 31 December 2020) and another one for everyone else. You go through both sets of checks before boarding. They're already present at the Folkestone terminal, just not implemented in game.
