They look really cool, but they don't much look like knights to me. Can anyone explain the symbolism?

These statues are supposed to represent three Cathar knights guarding the entrance to the Corbières area, which is the heart of the Cathar land (catharism being one of the medieval Catholic heresies). These statues have been acquired at the very beginning of the 1980s, and in fact it is one of the very first "highway landmarks" in France.
You might or might not like these concrete knights, but it's a very important symbol over there. When you come from Catalonia or the French Riviera and drive towards Toulouse, you see them at the very beginning of the A61. It's like a big "Welcome on the highway" sign.

Yes but there will be some roads to go to spain and some new motorway

And road to Andorra aswell.

Kutchek has done wonderfully to make what has already been done so far, but it's understandable that not much is present given the fact that we'll probably need another merge once DLC France is done (whenever that may be)
