There are no files that I can extract or that 7zip can open of the 7promods files.
I read through the tutorial and there they show the promods-vXXX.7z.001 file as an 7z file but for me it shows as an .001 file and I can only interact with it as that type of file.

You have to right-click that .001 file and choose Extract here, that's all. With 7-zip or WinRAR installed, it should be there.
