Normal that it does not work. You must be done after saving create your "mod" with the files that are in base / map + a def file you would have created and then you put this mod in the EuroTruckSimulator2 / mod folder. It is necessary to repeat each time the manipulation.

1. Why are you loading a profile?
When you launch the game, you can type "edit europe" or "edit test" right there on the profile selection screen
2. You need to pack your "test" map.
Go to that folder and pack your saved files into a ZIP archive, then put the archive into Documents/Euro Truck Simulator 2/mod.
Then load the game and type "edit test".
