Hi,
i searched a little bit in the web but i couldn't find useful tutorials on ets2 mapping and assets creating... Can someone recommend me video tutorials or so?

I followed that guide carefully and I got started with it, IMO it tells pretty much everything to get started

There is a great tutorial in Polish. It even tells you how to create signs. You can use google translate to make it German or English
