Create a text file named "env_data.sii" and put it in the ProMods definitions pack, it should look like this:
Change the value in "day_in_year" to a day not so close to the solstice, "summer_time" is the daylight saving adjustment.
I use "71" and "0" respectively myself, so the game simulates a day in early March without daylight saving time, sunsets around 18:00 and sunrises around 6:00, way less extreme than the default daylength.
I also recommend getting "Improved Weather Reload", someone posted a version that works with ProMods in the SCS forums. It fixes the main issue with the default ETS2 weather, afternoons being too dark and nights being too bright.
