I'm thinking of downloading Promods Canada but I mainly play on World Of Trucks in ATS. Obviously I won't be able to do WOT contracts to Canada, but will I be able to still do WOT contracts within the USA?

Yes, it's possible most of USA areas to do with WOT, just not near Canada.
Anyway it's recommended to use without map mods.
