Map question.
"Metres above sea level"
SCS´s Europe has some odd heights there "[ingame height]":
Innsbruck [9]
Carlisle [101]
Geilo "rondell", Norge. 773m [62]
Røldalsvatnet, Norge 380-363m [0] "lake"
All Scandinavian lakes seem to have the height of [0]
I haven't checked if Promods has modified any heights for more realism or not.

That's because height on the map doesn't scale well at a 1:19 scale; you can't build steeper slopes and make the map still driveable. You'll see a lot of different water levels in-game, but do you really notice that while driving?

Geographically, not all lakes should be on 0m - mainly seas and lakes is in 0m , because it is called sea level.Some is in 3km high, others are -100m for example. Being in-game, I cannot see any difference between the highs, maybe that like in Norway is higher than lake in Scotland and so on. [OFF-TOPIC]

A bezier patch is a patch of terrain you can free-form. It has 4x4 nodes you can mover around, and this will influence the shape of the patch.
The bezier patch is a new feature in 1.17 and is only used in the Scandinavia DLC area in the vanilla game. So far, it has proven to be really useful to fill up gaps in interchanges.
But I warn you: over-use in a small area can influence performance.

How to know if junctions like those in last picture are placed correctly and traffic will go right?

As long as you choose the correct prefabs (uk/mainland) and connect them properly to the roads (also watch out for the tick for left hand traffic in the properties if you build in the UK) you can't really do anything wrong
