Because snow doesn't appear totally white, even in full sunlight unless it's over exposed.
The surface is bumpy and non-uniform.
The current textures are too bumpy and non-uniform because they're stretched and very old.
The modded texture you showed is too uniform and bright.
Somewhere in between is what snow looks like.
