When we started, we planned a ferry from Hirtshals to Iceland. Why? Because it's one of the only regular ferries to Iceland, besides the one from Tórshavn. Hirtshals also has the only year-round ferry to Tórshavn. This is why we connected Hirsthals to ferries to Faroe and Iceland in the first place (we have done our research on that). The other two ferries from Tórshavn are there to provide more realistic connections to Norway and the UK.

The ferries in the north will be:
Tórshavn (FO) - Bergen (NO)
Tórshavn (FO) - Hirtshals (DK)
Tórshavn (FO) - Thurso (UK)
Tórshavn (FO) - Seyðisfjörður (IS)
Hirtshals (DK) - Seyðisfjörður (IS)
Hirtshals (DK) - Kristianssand (NO)
Hirtshals (DK) - Oslo (NO)
Esbjerg (DK) - Harwich (UK)
Fredrikshavn (DK) - Göteborg (SE)
Rødbyhavn (DK) - Puttgarden (DE)
Rostock (DE) - Gedser (DK)
Stockholm (SE) - Turku (FIN)
Helsinki (FIN) - Talinn (EE)

Bergen (NO) - Newcastle (UK) will be discontinued.

So we can't go to Newcastle anymore? What if we had a job from Bergen to Sheffield for example, we'd have to go to the Islands to get to the UK?
Pretty much. The ferry is cancelled to remove some unrealistic "short-cuts" (which are actually longer than the shortest route) and to reduce the "ferry-simulator" effect on our map. But then again, you'll be driving through the beautiful hills of Scotland ;)

Why we must detour to Faroe to deliver a container from Bergen to Sheffield :?: :?

Because the Newcastle-Bergen ferry was taken out of service some time ago.
In real life you have to driven down to Denmark and then take Esbjerg-Harwich

You could wonder the same: why should we take a detour to Newcastle when delivering from Bergen to Amsterdam? That is even stranger (and much more expensive than just taking the road).

Tórshavn is just a town you can pass quickly. Just hop on the ferry again.

Besides, there's actually no ferry between Bergen and Newcastle in real life, while the ferry between Thurso (via the Shetland islands) and Tórshavn does exist, just as the ferry between Tórshavn and Bergen. Though it's only seasonal, they do both exist.

I seriously don't get the fuzz about the change...

I've been up for such a change months ago, and I think it's perfectly logical.

At least I can drive through more of Scotland! One more question: do these routes above have return routes as well? Or is it just these ones only?

Stockholm (S) - Tallinn (EST)
Nynäshamn (S) - Ventspils (LV)
Karlshamn (S) - Klaipėda (LT) also would be better.

If you can build even Marienhamn (AX) [like Faroe islands] and E18 to Kapellskär, then ferry route would be following:
Kapellskär (S) - Marienhamn (AX); Långnäs (AX) - Turku (FIN)
(Removing Stockholm-Turku ferry route for more driving, than sailing :D )

Or from Stockholm, if you will not extend the road E18. ;)

This could be also a good idea :)
Feel free to add :)
