I know, this is a strange question to ask, because it's a EURO Truck Simulator, but, wouldn't it be challenging and beautiful at the same time if you could "drive" to French Guiana?

Maybe, but in ATS. Also, it has even less people than Iceland, so its importance is (not) debatable.
