@Koen i sent a request through the website about BFBS Cyprus being added. Did you manage to have a look at it yet?
I've been continuing to try and fix my issues, but to no avail. I've tried everything from re-installing the app, to resetting the firewall, and nothing has worked. If I have to stop using it, then I'll stop using it. However, it's become a major part of my ETS2 experience and I'll be gutted if I have to give it up.

Well, I have already mentioned most common problems. I'm not a magician, I cannot magically make your problem disappear unfortunately.
There is one last thing you can try, and that is changing the port Local Radio runs on. (it's in the settings file, make sure Local Radio is closed when you change it) to your favourite number between 1024 and 65355 (so something like 5374 should work)

Why do today what you can postpone until tomorrow?
I've just tried going into settings.json and changing the port, but when I clicked save, it said access is denied.
I get that you're not a magician, and I'm not mad at you for not being able to solve it. It's just my inability to solve it is slowly driving me insane

There was no separate 'Open as Administrator' option, so I believe it was already set to open as admin. Still not letting me save.
Sorry for being so annoying.
Just in case I've missed something blindingly obvious, here's what I end up with once I've got the game going.

Well, no, it does not open as administrator by default. You'd have gotten the same administrator popup as when opening Local Radio.
Anyhow, it you open the start menu, search for notepad and right click and select run as administrator, then you should be able to edit that file.

Still not worked. I'll try going back to Version 2.5 and see whether or not that works.
EDIT: Just tried opening version 2.5, but instead of doing what V3 did and allowing me onto the page but not giving any station options, V2.5 has just given me a page indicating that my firewall has blocked it. At least I can now be fairly certain that it's a firewall issue.
EDIT 2: Just decided to try accessing my modem manager and that has also been blocked on my laptop, so it looks like less of an ETS2 Local Radio issue, and more of a computer connectivity issue. I'm just gonna have to keep working at it.
Thanks anyway.

I'm just a mere bystander but by the looks of it you may have user rights permissions in your Windows environment which are preventing you from A) edit files like the settings.json and B) opening listening ports on local devices.
Without the proper access rights the app won't be able to function, you should run it in Administrator mode somehow
