Most exciting is road network and most boring are navigation signs.

Landscaping and making roads are my favourite parts, and signing is my least favourite part

Most exciting: Planning and building an empty map (building an intersection with blank roads or city)
Exciting: Adding visual details
Boring: Filling all map holes with bezier patches

Signs are my favourite part.. I'm bored by making terrains

Building cities is a best part of mapping. Recreating mountainous or hilly terrain is the worst part.

If I could map, my favorite would be signage

You can make signs without mapping, like Ellot.

Not really, as you still need to place signs or create new signage, which are a part of "mapping".

Hm...
But it can be proven that everyone can make good signs, independently of mapping talent. Probably same for placing.
