Would be nice to have the map updated to 1.41 so I can play the game...I would do it myself but you locked it.

Yes, but not on the same profile on which you tried 1.41. Once a profile had a taste of ETS2 1.41, it'll not be compatible with ETS2 1.40 anymore.

Some say, I'm addicted to ETS2. But then I say. No, it's ProMods, it's a way of life.

The best option is to simply downgrade to version 1.40 on steam. Very easy to do.
Right click on your your Truck Sim game in your library and select properties. Then go to betas and select temporary 1.40 and that is it.
In the past I never had any issues with my profile when I switched between releases due to mods or other issues.
If you want to be safe, just do a manual safe before the downgrade or even make a copy of your save files.
Another option that is 100% risk free. Have a 2nd vanilla profile. One that has no mods at all. Then when the upgrade happens, play with that, until the mods don't catch up.

Will I need the Iberia DLC to run the mod after it gets updated to 1.41?

No, ProMods 2.56 won't require Iberia. It will be compatible with it.
