There is a too tight turn on the road (U shaped road with hill) near ferry even AI struggles in flat bed trailers there.

Not much information to go on, without coordinates or screenshot . Some roads are difficult, but not impossible. But I'll check it out .

Also, it's somewhat annoying that there are rest stops marked on the map that don't appear in the world, such as the Norwegian toll booths and in Oslo there only seems to be one at the ferry terminal.

Yes, it's a tricky bend, but it's not impossible. There are harder ones - try Venice .
