If you are driving from Oslo to Honefoss and turn right onto the grass just after the bridge where there is a gap in the crash barrier, you can then drive down to the waters edge, and continue straight over the lake.

If you go far enough along the lake you can then drive off the edge of the world and into infinite freefall. Interestingly, whilst in freefall your speed changes between 800km/h to 1300km/h depending on the orientation of your truck, suggesting the game's physics model includes air resistance.

Actually, having played a bit more, there are many places that lack a barrier or impassable landscape between road and water

There's a fine line. If you use barriers too much you create invisible walls, if you don't use them all you can run off the map. Generally we expect people to stay on the roads :P
